Kale Salad

Makes 4-6 servings

This salad is easily adapted to whatever ingredients you have on hand.  Instead of apple, try strawberries, pears, or dried cranberries or cherries.  You can also mix in any small diced vegetables or nuts.

 Ingredients

1 bunch kale
¼ medium onion, minced
1 apple, diced small
4-5 radishes, sliced thinly
¼ cup olive oil
¼ cup cider vinegar
2 teaspoons honey
salt & pepper

Directions

Remove stalks from kale leaves and thinly slice.  Place in large bowl and combine with apples, radishes, and onions.  Whisk together olive oil, vinegar, salt & pepper and pour over kale mixture. Massage the greens with your hands for three minutes to soften the kale. Toss the kale mixture with the apples, radishes, and onions together and let sit 5-10 minutes to allow kale to wilt further. Serve and enjoy!
