Recipe: Savory French Toast

Savory French Toast
Makes 2 servings

A savory French toast is just as tasty as sweet French toasts! It’s also an easy to way create a simple, balanced meal of grains, dairy, protein, and vegetables. Whenever you can, choose whole grain bread over white/refined. It will keep you fuller for longer and provide you with all the nutrients that whole grains contain. We used mushrooms as our topping to our French toast base, but you can sauté any veggies of your choice!

Ingredients
Oil for the pan (canola, olive, vegetable)
2 eggs
2 tablespoons of milk
2 slices thick bread
1/2 onion, thinly sliced
1/2 pound sliced mushrooms
1 chopped clove garlic
salt and pepper, to taste
cheese of choice, optional

Directions

  1. In a bowl, beat together egg, milk, salt, and pepper.
  2. Dip slices of bread into egg mix, allowing the bread to soak up the egg mixture.
  3. Add oil to the pan over medium-high heat. Add the soaked slices of bread and fry, 2-3 minutes per side or until golden brown and crispy.
  4. In another pan, add some oil over medium heat. Cook onions and garlic until onions are soft. Add mushrooms and cook until mushrooms are soft, about 10 minutes. Season with salt and pepper.
  5. Top the French toast slices with mushrooms.
  6. Top with cheese, optional.
