Recipe: Cabbage and Potato Pancakes

Cabbage and Potato Pancakes
Makes 4 servings

Potato pancakes are easy to make, and they are delicious on their own or with additions of grated vegetables and fruits! Potatoes are high in complex carbohydrates, which give us energy. It’s easy to create a healthy meal with potatoes and vegetables!

Ingredients
2 large potatoes, grated
1 egg
1/2 head small cabbage, sliced finely
1/4 teaspoon ground black pepper
1/2 teaspoon salt
Oil (canola, olive, vegetable

Delicious Additions
1 large sweet potato, grated
1 large pear, grated
1 large apple, grated

Directions

  1. In a large skillet, saute cabbage with 1 teaspoon olive oil until soft and translucent. Place grated potatoes in a kitchen towel and squeeze out the liquid. Transfer to a bowl and mix in cabbage, egg, salt, and pepper.
  2. Add any additions of grated sweet potato, pear, or apple.
  3. Pour oil into a large skillet to coat bottom and place over medium heat. Drop 1 generous tablespoon batter into skillet and flatten with metal spatula. Cook until golden and cooked through, about 5 minutes per side.
  4. Transfer to paper towel to remove excess oil. Repeat with remaining batter. Enjoy!
