Pasta with Peanut Sauce
Makes about 3 servings

There is more that you can do with peanut butter, other than desserts and the ol’ PB&J. This recipe is incredibly flexible. Add any vegetables or proteins of your choice to the pasta for a tasty and balanced meal.
Ingredients
8 oz Pasta
3 Tablespoons peanut butter
1 Tablespoon soy sauce
3/4 Tablespoon lime juice
1 Tablespoon sesame oil (or canola oil)
1-2 garlic cloves, minced
Crushed red chili flakes, optional
Veggies/Proteins, of choice
Directions
- In a large pot, bring plenty of salted water to a boil.
- While water is coming to a boil, place all sauce ingredients (peanut butter, soy sauce, lime juice, oil, red chili flakes, garlic cloves) in a boil. Add 3 tablespoons of water and whisk everything together.
- After water boils, add pasta and cook according to package instructions. After pasta finishes cooking, drain well.
- Add drained pasta to sauce and toss well. Add more soy sauce, if preferred.
- Serve and enjoy!
