Recipe: Pasta with Peanut Sauce

Pasta with Peanut Sauce
Makes about 3 servings

There is more that you can do with peanut butter, other than desserts and the ol’ PB&J. This recipe is incredibly flexible. Add any vegetables or proteins of your choice to the pasta for a tasty and balanced meal.

Ingredients
8 oz Pasta
3 Tablespoons peanut butter
1 Tablespoon soy sauce
3/4 Tablespoon lime juice
1 Tablespoon sesame oil (or canola oil)
1-2 garlic cloves, minced
Crushed red chili flakes, optional
Veggies/Proteins, of choice

Directions

  1. In a large pot, bring plenty of salted water to a boil.
  2. While water is coming to a boil, place all sauce ingredients (peanut butter, soy sauce, lime juice, oil, red chili flakes, garlic cloves) in a boil. Add 3 tablespoons of water and whisk everything together.
  3. After water boils, add pasta and cook according to package instructions. After pasta finishes cooking, drain well.
  4. Add drained pasta to sauce and toss well. Add more soy sauce, if preferred.
  5. Serve and enjoy!
