Cabbage and Potato Pancakes

Makes 4 servings

 Ingredients

2 large potatoes, grated
½  head small cabbage, sliced finely
1 egg
¼ teaspoon ground black pepper
½ teaspoon salt

Directions

1. In a large skillet, sauté cabbage with 1 teaspoon olive oil until soft and translucent.  Place grated potatoes in a kitchen towel and squeeze out the liquid. Transfer to a bowl and mix in cabbage, egg, salt and pepper.
2. Pour oil into large skillet to coat bottom and place over medium heat.  Drop 1 generous tablespoon of batter into skillet and flatten with metal spatula. Cook until golden and cooked through, about 5 minutes per side. Transfer to paper towel to remove excess oil.  Repeat with remaining batter.
