Potato Apple Hash

Makes 4 servingspotatoes and apples

Ingredients

2 tablespoons olive oil
2 tablespoons water
1 large onion, chopped
1 pound potatoes, small diced
½ pound apples, small diced
2 tablespoons ketchup
1 tablespoon Dijon mustard
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper

Directions

Heat oil over medium-low heat in 12-inch skillet.  Add onion, potatoes, and apples and cook over medium-low heat for 6 minutes.  Turn potatoes with a flat spatula and continue to cook for another 10 minutes.

Mix together water, ketchup, mustard, and parsley.  Pour over potato mixture and season to taste with salt and pepper.  Cook until potatoes are evenly browned, about 5 minutes longer.  Enjoy!
