Bok Choy Stir Fry

Makes 4 servingsbaby bok choy

Great on top of rice. Add chicken or other protein if available. 

Ingredients 

2 tablespoons oil, such as canola oil
1 medium onion, thinly sliced
1 red bell pepper, julienned
2 cups mushrooms, sliced
3 baby bok choy, sliced into 1/2-inch pieces
3 cloves garlic, thinly sliced
2 tablespoons soy sauce
freshly cracked black pepper

Directions

  1. In a wok or large sauté pan, add the oil and when hot, add the onions and bell peppers. Sauté, stirring constantly, for 2 minutes. Add the mushrooms and cook for 2 minutes more.
  2. Add the bok choy, garlic, soy sauce and sauté until just wilted. Add pepper, to taste, and serve immediately.
