Couscous Confetti Salad

Makes 3-4 servings

Use this recipe as a guide and add whatever vegetables and fruits you have on hand. Top with any fresh herbs or nuts. Feel free to substitute cooked rice for the couscous.

Ingredients                 

1 cup uncooked couscous
¼ cup onion, diced
1 cup fruit, diced (suggestions: apples, pears, plums, blueberries)
1 cup vegetables, diced (suggestions: celery, cucumbers, corn, zucchini)

Dressing:
2 tablespoons orange juice
2 tablespoons red wine vinegar
¼ cup olive or canola oil
¼ teaspoon each of salt and pepper

Directions

1. Bring 1 ½ cups water to boil.  Add couscous, cover with a lid and remove from the heat.  Let stand, covered, 5 minutes.
2. After 5 minutes, fluff with a fork.  Combine dressing ingredients.  Add onion, fruits, and vegetables of choice to the couscous and pour over the dressing.  Mix together and season to taste with salt and pepper.
