When you, or as in our case the food bank, have tons of broccoli, a great way to eat it is as a fritter! It’s a super easy and fun recipe to make with kids. We found the best way to mix this batter is to squeeze and squish it all together with our hands.
Ingredients
3 cups chopped broccoli
1/3 cup grated cheese
1 egg
1 clove garlic, minced
½ cup flour
½ teaspoon salt
ground pepper or red pepper flakes to taste
Directions
- Bring ½ inch of water to boil in a small pot. Add the broccoli and cover with a lid. Simmer for 5-6 minutes. Drain. Mash lightly and set aside to cool.
- In a large bowl, lightly beat the egg. Add flour, cheese, garlic, salt and pepper. Add the cooled broccoli and stir ingredients together.
- Heat a large skillet over medium heat. Add 1 tablespoon oil to pan and let heat up. Drop a heaping tablespoon mound of batter into the pan and press down lightly to flatten. Cook 2-3 minutes on each side or until golden brown. Transfer to paper towels to drain.
- Enjoy as is or topped with plain yogurt.
