Greek Salad Bites

If you are working on building your chopping skills like our participants in our weekly Community Kitchen, this recipe offers ample opportunities to practice.  It’s also a great appetizer to take to your next potluck.

Greek Salad Bites
Serves 10-12 as appetizers

Ingredients

1 pint cherry tomatoes, cut in half
1 medium cucumber, cut into 1/2 inch cubes
1 block feta cheese, cut into 1/2 inch cubes
1/2 cup pitted olives
1/4 red onion, thinly sliced
toothpicks
1-2 teaspoons olive oil
1-2 teaspoons red wine vinegar

Directions

Place each ingredient in a separate bowl or pile and set up an assembly line.  Take a toothpick and thread on each ingredient.  You can experiment with what order works best.  We found ours to be cucumber, olive, onion, feta, tomato.  Place finished salad bite on a plate and repeat until you have used up all of the components.  Drizzle plate with olive oil and red wine vinegar and enjoy!
