Recipe: Bread Saute w/Tomatoes and Onions

Bread Saute

Bread Saute w/Tomatoes and Onions
Makes 2-4 servings

If you don’t have rice or pastas on hand, sauté bread with vegetables of your choice for a meal full of grains and vegetables. You can also toss in some canned beans for some protein and cheese for some dairy. Whenever you can, choose whole grain bread over white/refined. It will keep you fuller for longer and provide you with all the nutrients that whole grains contain.

Ingredients
Oil for the pan (canola, olive, vegetable)                              
Salt and pepper, to taste
2 cups 1-inch bread cubes
1 medium red onion, coarsely chopped
1 medium tomato, chopped
Cheese of choice, optional

Directions

  1. Heat oil in a large skillet or pan. Add bread, salt and pepper. Cook over low heat, stirring frequently, until lightly browned. *You can also use the bread untoasted or toast in a 350F oven for 10 minutes or until browned.* Remove bread and set aside.
  2. Add 2 more tablespoons of oil and cook the onion and tomatoes together. Season with a little salt.
  3. Add the bread and toss all together in the skillet until the bread is warmed through.
  4. Top with cheese, optional.
